LEVIATHAN

Synopsis:

 

We wanted to make a big stout as part of our core line-up. Notes of Baker’s chocolate, toffee, and a little bit of roast and caramel. Neither too sweet nor too boozy, this big boy is surprisingly smooth. English yeast lends a delicate ester profile that helps mask the high alcohol. Guidelines be damned: we are proud to call it a “Session-Imperial Stout.”

water, yeast, barley, wheat, hops, oats, lactose

Willamette, Magnum

Food Pairing:

As a heavier beer, Leviathan stands up to stronger flavours like steak, aged cheese, or very rich desserts like cheese cake.

 

Fun Fact:

 

We brewed our first batch of Leviathan to Mastodon’s seminal album of the same name.
